Holiday Update
We are now officially less than two weeks away from Christmas day! 2012 has flown by and supposedly even though the Bible states that no man will know the time or day, many believe the Mayans have it all figured out and the 21st of this month is the end of time as we know it. I’m pretty sure we’ll still be here on the 22nd. 😉 For the next couple of weeks I won’t be posting 5+ times per week. TSM and I are putting our house on the market the first week of January and are preparing to move down to South Carolina. I’ll share a little back story as to…

A Moment of Silence…
My regular posts will resume tomorrow here on KaceyCooks, but today, I am observing a moment of silence…

Italian Sausage and Gruyere Baked Omelet
Today is the perfect day to make breakfast for dinner. Do you love breakfast for dinner as much as we do? Back when I used to watch copious amounts of Food Network TV, I saw Giada make this dish and I knew it would be something that TSM would enjoy. I made very few changes to her recipe because for once the amounts on the recipe were accurate and the dish turned out. I don’t know about you, but sometimes when I look at recipes that celebrity chefs post online I have to scratch my head in wonderment when it comes to their ingredient amounts. It’s like- Seriously? You wrote half a cup,…

Tuna Salad and a Tuna Melt
I like tuna fish. My mom used to make tuna fish for my sister and I for supper sometimes. I don’t remember if she used mayo or Miracle Whip (which I now despise) but I do know that my sister and I would spread the tuna out on our plates, make it nice and flat and then “cut” squares with the sides of our forks and eat the tuna square by square. Yup- we were totally ahead of our time, my sister and I.

Mini Italian Meatloaves (GMO-Free)
I married a meat lover. The Stud Muffin (TSM) not only just loves meat, he lurves it. He lurves meat like Tammy Faye loves mascara. He lurves meat like Kristen Stewart loves to remain expressionless no matter what’s going on around her. TSM also loves a good meat and potatoes dinner and all but cries if he’s asked to eat a vegetable other than peas or carrots. He probably won’t like that I’ve shared that with you, and since this is my blog there may have been a little creative licensing exaggerating about the crying when made to eat veggies. Early on in our marriage I was at a loss for creative meal…

Carrot Pineapple Bread
I like quick breads. I’m sure since I’ve already posted a muffin recipe and a banana bread recipe that you already knew that. I like them because they’re easy, quick (hellooo Capt’n Obvious), tasty, they make a good snack, and they make a good (Christmas) gift. This bread has a lot of flavor and you’ll wish you’d heard of this years ago because you’re going to love it that much. This bread is simply magnificent. I thought with Christmas right around the corner you might be looking for something new/different to bake for a Christmas gift exchange, or for a Holiday gathering. I love receiving home-baked gifts, don’t you? This recipe is super…

Double Blueberry Muffins
I’m trying to steer TSM away from his normal breakfast of a cup of coffee and cereal bars claiming to have all sorts of nutritious grains, but they’re really just High Fructose Corn Syrup, preservative, artificial colors, flavors and GMO delivery systems. Thankfully, he likes scones, which we’ve made plenty of lately so I thought I’d try my hand at making homemade muffins. Turns out, these homemade muffins are easy and fabulous! Yes, I *do* have a from scratch recipe for muffins from culinary school, but it’s one of those overly heavy, super dense, almost gummy types of mammoth muffins, and that’s not happy food in my opinion. I like my muffins…

Jalapeno Cheddar Biscuits
I love biscuits. I’ve yet to meet a biscuit that I didn’t like. I like biscuits SO much, that I was willing to spend twice as long as it normally takes to make them so that I could convert this recipe from grams to the U.S. way of measuring ingredients. I have a plethora of baking recipes in which one needs a kitchen scale and a large collection of plastic containers. Everything gets weighed so everything needs its own container. I happen to have a container addiction so that’s not a problem. The problem is that only a modicum of you lovely peoples owns a digital scale and I’d sort of like this…
