Spaghetti Squash- (A Recipe Request from a reader)
I thought today would be a good day to resurrect one of my earlier recipes. Spaghetti squash wasn’t something that was served at our house much until about 18 months ago at which time I had several friends on weight loss plans. I was trying to rework some of my recipes to make them healthier for friends. I’m not a big fan of squash. That may make me unpopular, but it is what it is. I’m being honest. Easy Cheesy Twice-baked Potatoes
When I sat down two weeks ago to make my menu for this week I must have been in a hurry because almost every dish I’ve made has had cheese in it. I still have two recipes to go and they both call for cheese. I’m laughing at myself. I have to make sure to spread those meals out over several weeks versus one week because my cheese bill was insane!! Twice-baked potatoes are one of my favorite side dishes. I especially like them with a good rib-eye steak.

One Pot Hearty Beef Stew (Organic/GMO-Free)
I don’t know about you, but nothing warms me up like a bowl of beef stew. Rich gravy-like sauce, tender veggies, chunks of beef that melt in your mouth. It’s soul food if ever there was. This stew is comforting, hearty and it’ll warm you up. It’s like getting a hug from the inside out. Eating this stew even makes me happy. How’s that for emotional eating?

You guys are going to like this spin on a Thanksgiving classic side dish. And trust, me I know exactly what you’re thinking. You’re thinking “Peaches AND Sweet Potatoes?!?!” “Is this woman out of her ever lovin’ mind?!” Well, as a matter of fact, probably. But yes, peaches *do* go well with sweet potatoes and I’ll prove it to you. It would actually work better if you made this dish so you had additional evidence with which I could prove just how right I really am.
