30-Minute Monday–Red Lentil Coconut Soup with Garam Masala
Spicy, exotic, hearty, filling, luscious, vibrant, unique- these are words that I would use to describe this soup. It’s a celebration in your mouth. You may even violate the spoon because you’ll wanna get every.last.drop off it when you take your first bite. Yeah, it’s *that* good. You may be surprised to learn that I don’t care for Indian food. Back when I used to do home mortgages and worked in a bank, we would have a big potluck once a month. We had the sweetest banker who was from India, but every single time I ate the dishes he brought, I’d get super sick. For some strange reason I tend to avoid…

Real Food Split Pea and Ham Soup
Out of all the veggies in the world I strongly dislike peas. Naturally, I’m betrothed to a man who LOVES peas. I mean all out, get you in mah belly, I could eat three bowls each day LOVES peas. God has a sense of humor all right. Because I love my dear Stud Muffin, I make him Split Pea Soup, but I add ham because I love ham. Throw pork into a soup and I’m a happy girl. Throw peas into a soup and The Stud Muffin is a happy Man. Combine them, and you have two happy people eating a rather tasty bowl of soup, even though it does contain a pound…

Wild Rice Corn Chowder
It’s getting cold here in South Carolina. Granted it is still in the 50s most days, but there is something to be said for a Southern 50 degrees and a Midwestern 50 degrees. In Minnesota we’d have windows cracked and shorts on. The only reason we’d turn the furnace on is if it was uber windy. Down here I’m wearing a long sleeved shirt, a sweat shirt, a fleece bathrobe, socks, slippers, a pair of fitted long underwear AND yoga pants and I’m still cold. It’s a bone chilling kind of cold when the temperatures drop in the south. Call me crazy, but I can’t warm up. I can’t keep taking showers to…

Hearty Potato Soup with Bacon
I have a long list of personal quirks. I like to put an odd number of ice cubes in my drink unless it’s a small glass, then 2 ice cubes will do. I sometimes zig-zag the part in my hair, and will do either 5, 7 or 9 zigs and zags. I prefer to keep the volume on my car radio set to even numbers, and although I like a good homemade French fry, I don’t love potatoes. Don’t tell my Irish grandmother. It’ll break her heart. She’s already a bit bummed that she doesn’t have one full red-headed grandchild or great grandchild among all 18 of us. My less than enthusiastic attitude…

One Pot Hearty Beef Stew (Organic/GMO-Free)
I don’t know about you, but nothing warms me up like a bowl of beef stew. Rich gravy-like sauce, tender veggies, chunks of beef that melt in your mouth. It’s soul food if ever there was. This stew is comforting, hearty and it’ll warm you up. It’s like getting a hug from the inside out. Eating this stew even makes me happy. How’s that for emotional eating?

Clucker-Noodle Soup (GMO-Free)
I’m not normal- And because I’m not normal, I like to call foods by other names. For instance, the humble chicken. Since we eat chicken about 3 times a week I get tired of saying chicken and feel that maybe if I spruced up what I call it, it won’t seem like it’s the THIRD chicken dish I’ve made this week. Enter: Clucker. Chickens cluck, which makes them cluckers so I call chickens cluckers. Are you glad I’ve shared this little bizarre corner of my world with you? Hopefully so, because yer all in for a groovy ride if you stick around with me for the next several years. Whooey! Let’s talk about…

One Pot Jalapeno Chicken Corn Chowder
It’s the Saturday after Thanksgiving. You’ve just survived the official kick-off to the Holiday Season. Hopefully you’re one day closer to being able to fit back into a structured pair of pants, but if not, don’t worry. Soon you’ll be decking the halls, and fa-la-la-la-laa’ing while you sit in front of the TV watching Rudolph the Red Nosed Reindeer while stuffing fistfuls of Spritz cookies and homemade fudge down your pie hole and your yoga pants will become your best friend. You might as well just kiss your jeans goodbye until January 2nd, when you join a gym (again) to get rid of those pesky 15 pounds you put on over the past…
