I thought today would be a good day to resurrect one of my earlier recipes. Spaghetti squash wasn’t something that was served at our house much until about 18 months ago at which time I had several friends on weight loss plans. Comfort food people! This is comfort food!! It’s like being in your jammies, in front of the roaring fire, with your bunny slippers on, wrapped in a Snuggie, and reading a good book and sipping hot chocolate, but for your tummy! Easy Cheesy Twice-baked Potatoes
When I sat down two weeks ago to make my menu for this week I must have been in a hurry because almost every dish I’ve made has had cheese in it. I still have two recipes to go and they both call for cheese. I’m laughing at myself. I have to make sure to spread those meals out over several weeks versus one week because my cheese bill was insane!! Twice-baked potatoes are one of my favorite side dishes. I especially like them with a good rib-eye steak.

Jalapeno Cheddar Biscuits
I love biscuits. I’ve yet to meet a biscuit that I didn’t like. I like biscuits SO much, that I was willing to spend twice as long as it normally takes to make them so that I could convert this recipe from grams to the U.S. way of measuring ingredients. I have a plethora of baking recipes in which one needs a kitchen scale and a large collection of plastic containers. Everything gets weighed so everything needs its own container.
