Happy Monday everyone! It’s time for another 30-Minute Monday dish. Are you excited? I know I am. This weeks dish was a tasty one. I loved the pepper and onion mixture SO much; that I served it over some linguine the next night for dinner and it was UH MAY ZING! Whoa! Yeah, if you would rather just skip the hoagie roll, boil up some pasta and top with a couple slices of the sausage, and a few spoonfuls of the peppers and onions. Yee-Haw it was tasty. Prosciutto, Calabrese Salame & Capocollo Panini’s with Melted Brie, Pesto and Arugula
I went to Trader Joe’s today and when I was walking into the store, I saw a couple making sandwiches out of the back of their SUV. I figured they had to travel a ways to get to the nearest Trader Joe’s to them, and they were hungry and wanted to eat something before the long drive back. Anyway, I noticed they had some salami and French baguettes–which looked SO good. Their humble lunch in the parking lot inspired me to make these panini’s. I love panini’s. Some day I hope to be able to afford a higher quality press so that I don’t have to fold a towel three ways from Sunday…

3-Cheese Onion Bacon Jam Panini’s GMO-Free
Since revealing my bacon addiction to you guys was so cathartic, I thought I should also confess my love of all things melted cheese. So here goes- “Hi, my name is Kristine, and I’m a melted cheese-aholic!” After you try this panini, you will also become a melted cheese-aholic. Be happy about this. There’s nothing better than finger-lickin’, knee-slappin’ so darn tasty GMO-free panini, loaded with three kinds of cheese and busting at the seams with a drool inducing caramelized onion bacon jam. Tuna Salad and a Tuna Melt
I like tuna fish. My mom used to make tuna fish for my sister and I for supper sometimes. I don’t remember if she used mayo or Miracle Whip (which I now despise) but I do know that my sister and I would spread the tuna out on our plates, make it nice and flat and then “cut” squares with the sides of our forks and eat the tuna square by square. Yup- we were totally ahead of our time, my sister and I.

Curry-Cayenne Chicken Salad
Howdy! Boy, you guys are in for a real treat today. Curry-Cayenne Chicken Salad is one of The Stud Muffin’s favorite things to put between two slices of bread. It is packed with flavorful spices and it has a touch of heat. It’s also loaded with veggies, so that totally makes up for the fact that you will be using some mayonnaise in this recipe. This chicken salad tastes fantastic on toasted bread or wrapped in a tortilla with some crisp lettuce thrown in, or on regular sandwich bread.
