It’s a fingers only meat buffet at Real Food Girl: Unmodified today! We’re grilling Ribs! As far as I’m concerned, ribs could easily be categorized as one of the really good things about life. Whether they’re baby back, St. Louis, Country Style or beef ribs, they are just darn tasty. I love that you don’t need silverware and it’s acceptable to get stupid-messy while eating them. Pan. Fried. Pork. I could leave it at that, post few photos and you’d be salivating while you run to the freezer to see if you have any pork chops you can thaw out. Is there anything better than breaded, pan-fried pork that’s been pounded thin and seasoned just perfectly? 30-Minute Monday- Speedy Pork Pozole
Today’s recipe is really yummy. There is something about a rich, spicy, pork and hominy stew to get the taste buds revved up and bring a smile to my face. I typically make this dish over several hours in a Dutch oven and I buy some red chiles and make a sauce with them to enhance the flavor of this stew, but in this rendition, we’re short on time, so a few teaspoons of adobo sauce from a can of Chipotle chiles will have to do. Isn’t that a beautiful thing? I must say that a properly seared pork chop brings tears of happiness to my eyes. If you’re a child of the 60s or 70s you probably ate your fair share of pork chops that were dry as saw dust because back then our folks were told to cook pork until bone dry and then cook it some more. I married a meat lover. The Stud Muffin (TSM) not only just loves meat, he lurves it. He lurves meat like Tammy Faye loves mascara. He lurves meat like Kristen Stewart loves to remain expressionless no matter what’s going on around her.
