Asian Chicken Pasta Salad with Crispy Wontons
I grew up right in the heart of the Twin Cities. That’s in Minnesota, don’t-chya-know? Back in the day, before it was bought out by Macy’s, Dayton’s department store was a happening place to be. There was a restaurant located inside this Dayton’s (which eventually became Marshall Field’s), and on occasion when my sister and I would spend the weekend with my grandparents, we’d take the city bus to downtown St. Paul, and have lunch at Dayton’s restaurant. If we were really good, we got to go to the candy counter and pick out 1 or 2 suckers. They had the best suckers. They were rectangle shaped, and took forever to finish. Ahh, those…

30-Minute Mondays–Onion Bacon Jam Grilled Cheese
Bacon, caramelized onions, Gruyère cheese and golden, buttery, toasted bread. Are you hungry yet? If not, please have someone check you for a pulse. Maybe even take your temperature. Go ahead. I’ll wait. Pulse? Good. Hungry now? Perfect. I knew probably didn’t hear me mention bacon and melted cheese. For the past two weeks I’ve been working hard on updating some old posts with new photos, and even revamping the recipes enough where I felt it was best to just write a new post and link to the old one for a couple of reasons. One- we all get to see just how far I’ve come since I started blogging, and two- these…

Prosciutto, Calabrese Salame & Capocollo Panini’s with Melted Brie, Pesto and Arugula
I went to Trader Joe’s today and when I was walking into the store, I saw a couple making sandwiches out of the back of their SUV. I figured they had to travel a ways to get to the nearest Trader Joe’s to them, and they were hungry and wanted to eat something before the long drive back. Anyway, I noticed they had some salami and French baguettes–which looked SO good. Their humble lunch in the parking lot inspired me to make these panini’s. I love panini’s. Some day I hope to be able to afford a higher quality press so that I don’t have to fold a towel three ways from Sunday…

Organic Chicken Pasta Salad
Can you believe that the end of summer is fast approaching? I can’t. We had our last measurable snow storm in mid-May here in Minnesota, so to know that cooler temps are on the way kinda makes me a wee bit happier that we’re moving to South Carolina in 11 days. I realized I had to get the rest of my pasta salad recipes posted before Labor Day. I don’t want y’all to go hungry. This recipe is a favorite of The Stud Muffin’s. This man has never met a cold pasta salad that he didn’t like. Throw some organic peas and chicken in there and the man is happier than a tick…

Citrus Kale Couscous Salad
Today’s recipe is one of my all-time favorite deli-type salads. I typically enjoy this salad for lunch, or as part of a light dinner on those days where it’s too dang hot to turn on the oven. It’s not heavy, doesn’t contain mayo, it’s fresh, bright, clean and delightful. There are different textures going on in this salad so it’s not just soft, mushy, bland ingredients. I believe you’re going to enjoy this. I first tried this salad when I worked for a high-end gourmet grocery store. During our training they gave us several deli salads to taste test. Being the INFJ that I am, I…

Clucker-Noodle Soup (GMO-Free)
I’m not normal- And because I’m not normal, I like to call foods by other names. For instance, the humble chicken. Since we eat chicken about 3 times a week I get tired of saying chicken and feel that maybe if I spruced up what I call it, it won’t seem like it’s the THIRD chicken dish I’ve made this week. Enter: Clucker. Chickens cluck, which makes them cluckers so I call chickens cluckers. Are you glad I’ve shared this little bizarre corner of my world with you? Hopefully so, because yer all in for a groovy ride if you stick around with me for the next several years. Whooey! Let’s talk about…

3-Cheese Onion Bacon Jam Panini’s GMO-Free
Since revealing my bacon addiction to you guys was so cathartic, I thought I should also confess my love of all things melted cheese. So here goes- “Hi, my name is Kristine, and I’m a melted cheese-aholic!” After you try this panini, you will also become a melted cheese-aholic. Be happy about this. There’s nothing better than finger-lickin’, knee-slappin’ so darn tasty GMO-free panini, loaded with three kinds of cheese and busting at the seams with a drool inducing caramelized onion bacon jam. No really. There isn’t anything better. Alright, so maybe if Johnny Depp were holding this panini it would be better…

Tuna Salad and a Tuna Melt
I like tuna fish. My mom used to make tuna fish for my sister and I for supper sometimes. I don’t remember if she used mayo or Miracle Whip (which I now despise) but I do know that my sister and I would spread the tuna out on our plates, make it nice and flat and then “cut” squares with the sides of our forks and eat the tuna square by square. Yup- we were totally ahead of our time, my sister and I.
