Wild Rice Corn Chowder
It’s getting cold here in South Carolina. Granted it is still in the 50s most days, but there is something to be said for a Southern 50 degrees and a Midwestern 50 degrees. In Minnesota we’d have windows cracked and shorts on. The only reason we’d turn the furnace on is if it was uber windy. Down here I’m wearing a long sleeved shirt, a sweat shirt, a fleece bathrobe, socks, slippers, a pair of fitted long underwear AND yoga pants and I’m still cold. It’s a bone chilling kind of cold when the temperatures drop in the south. Call me crazy, but I can’t warm up. I can’t keep taking showers to…

Meatballs with Beef, Pork and Veal
Welcome to the new blog site everyone! Are you as excited to be here as I am to have you here? I hope so! Are you ‘CRAZY excited’, as my 8-year-old niece would say? Imagine my surprise when after importing all the posts from my Blogger site I realized that I’ve shared my “Gravy”/Marinara sauce recipe, and a quick tomato meat sauce/ragu recipe and a basic white sauce recipe but I never shared my meatball recipe? What is wrong with me? Um, don’t answer that please… Please accept my most genuine apology for taking so long to post my meatball recipe. I should probably remember to take my memory supplements more often. I…

Organic Beef Stock
I’ve shared my chicken stock recipe, and I felt it was high time to share with you how to make a decent beef stock. You won’t realize how flavorless and watered down a can or carton of beef stock is until you make your own from scratch using the highest quality ingredients you can find. I generally make at least 1 chicken stock recipe per month. Sometimes two. And 1 beef stock recipe per month. You’ll be surprised just how easy it is to make your own stock. You’ll wonder why you didn’t make it sooner!

Cheddar Bacon BBQ Meatloaves
Today I have a fun twist on your everyday meatloaf. The Stud Muffin and I like meatloaf. Don’t believe me? Just look (Here) and (Here) and you’ll see just how much. I once landed a free-lance writing assignment where I would assist 2 other free-lance writers in coming up with 100 meatloaf recipes for the Client’s cookbook. I wasn’t keen on the fact that I would lose rights to any recipe(s) that I submitted. I could never claim these recipes as my own, blog about them, talk about them or share them. That didn’t seem groovy to me at all, so I graciously backed out and decided that free-lance food writing was not…

Italian Sausage & Spinach Lasagna Roll-ups (Organic/GMO-Free)
Cheeses, Italian sausage, spinach and pasta- It’s love on a plate!! This is one of my favorite go-to recipes when I’m not in the mood to bake up a huge pan of lasagna, yet I’m in the mood for some saucy, cheesy, noodley, meaty goodness.

Mini Italian Meatloaves (GMO-Free)
I married a meat lover. The Stud Muffin (TSM) not only just loves meat, he lurves it. He lurves meat like Tammy Faye loves mascara. He lurves meat like Kristen Stewart loves to remain expressionless no matter what’s going on around her. TSM also loves a good meat and potatoes dinner and all but cries if he’s asked to eat a vegetable other than peas or carrots. He probably won’t like that I’ve shared that with you, and since this is my blog there may have been a little creative licensing exaggerating about the crying when made to eat veggies. Early on in our marriage I was at a loss for creative meal…

Homemade Marinara (or as we Italians call it- GRAVY)
TSM is Italian. Long before we met, I told God that I wanted to marry an Italian and that I wanted his last name to start with a “C” so that I could be a “Mrs. C” and be super cool like Joanie and Ritchie’s mom from Happy Days. I would be the popular mom and all the neighborhood kids would want to come to our house because I was just that spectacular and my kids were phenomenally sensational. The good news is that God answered my prayers for an Italian husband with a last name that began with a “C”. The bad news is that I’m unable to have children of my…
