With autumn fast approaching most blogger’s are already knee-deep in comfort food recipes, apple and pumpkin desserts and casseroles. But not me. Nope. We made it from MN to SC and it’s hot down here. Prosciutto, Calabrese Salame & Capocollo Panini’s with Melted Brie, Pesto and Arugula
I went to Trader Joe’s today and when I was walking into the store, I saw a couple making sandwiches out of the back of their SUV. I figured they had to travel a ways to get to the nearest Trader Joe’s to them, and they were hungry and wanted to eat something before the long drive back. Anyway, I noticed they had some salami and French baguettes–which looked SO good. Their humble lunch in the parking lot inspired me to make these panini’s. I love panini’s. I’ve loved almost every dense, chewy dessert bar that has ever crossed my luscious lips. There is something about a good dessert bar that brings out the inner Preschooler in me who believes everything is “mine” and refuses to share. Citrus Kale Couscous Salad
Today’s recipe is one of my all-time favorite deli-type salads. I typically enjoy this salad for lunch, or as part of a light dinner on those days where it’s too dang hot to turn on the oven. It’s not heavy, doesn’t contain mayo, it’s fresh, bright, clean and delightful. There are different textures going on in this salad so it’s not just soft, mushy, bland ingredients. Easy No-Knead Rustic Bread
Food Hippies, I have the easiest, no-knead bread recipe and I’m super excited to share it with you! Ya know what else? It’s SO good. I love to cut a couple of thick slices, and wrap it in some foil and toss it in a 350 degree oven for a few minutes and then slather on some nummy, organic, grass-fed butter from a local dairy.
